Ancient Olive Oil

At Joseph's Organic Bakery, our Premium Olive Oil is produced from Ancient Heirloom trees 300-1000 years old. Situated in the hills surrounding an old Spanish farming village, our olive orchards have been cultivated for generations on a Family Farm. Our olives are carefully handpicked from certified organic, ancient heirloom trees. Our ancient trees are strong and nutrient rich due to ancient farming techniques that safeguard the soil, producing high polyphenol olive oil.

Most of today's olive trees are GMO hybrid trees which bear fruit after 3 years whereas our Heirloom Olive trees only bear fruit after 20 years. For most producers, the economic incentive to harvest quickly overrides the health benefits of using heirloom trees. The new GMO trees do not contain high nutrient levels and do not have the life expectancy of our heirloom trees.

By prioritizing these traditional methods over modern mass-production techniques, we ensure that every drop of our olive oil remains pure, unrefined, and of the highest quality, offering a truly exceptional and health-conscious product for those who appreciate the taste and health benefits of true olive oil.

 

Slow Drip Extraction Process- The Ultimate in Cold Pressed

Once harvested, the olives undergo a meticulous process in which they are cold pressed between stone, a traditional technique that has been used for centuries to preserve the integrity of the oil. Rather than relying on the more commonly used centrifuge method, which rapidly extracts oil in larger quantities, we adhere to the ancient Slow Drip method, a time-honored process utilized by the Ancient Romans that yields less oil but significantly enhances its quality.

89% of Olive Oil today is extracted by machine, using the centrifuge method. The centrifuge method destroys the molecular structure of the oil, removing its health benefits.  Our ancient Slow Drip Method takes 45 Days. This 45 Day Extraction Process preserves the molecular structure remains intact, thus ensuring Optimal Health Benefits. This deliberate and patient 45 Day extraction process helps retain the olive oil’s full nutritional value, preserving its essential antioxidants, vitamins, and rich, complex flavors while also preventing rancidity, which commonly manifests itself in olive oil with that strong "acidic" taste.

Ancient Farming Methods- Nutrient Rich Soil

In Addition to the Heirloom Trees what makes our olive oil unique are the ancient farming methods used on the farm for generations. Each tree was planted far apart to ensure the Soil doesn't get depleted and the trees are supplied with adequate nutrients. This is in contrast to modern farming methods whereby the olive trees are planted tightly in rows. 

High Polyphenol Olive Oil

Our trees survive for hundreds of years because of these ancient farming techniques mentioned above. As a result, our strong and healthy olive trees produce olives fortified with high levels of polyphenols and antioxidants which have anti-inflammatory properties.  GMO trees are young and weak, their olives are just not nutrient rich.
