Olive Oil from Ancient Heirloom Trees. Our special Olives are harvested in Spain from 300-1000 year old trees. These trees have been cultivated for generations on a family farm using ancient farming methods.
Each tree is grown far apart to ensure the soil doesn't get depleted and the trees are supplied with adequate nutrients.
In addition to the heirloom trees, what makes this olive oil unique is its extraction process. Our extraction is done using an ancient slow drip system, whereby the oil is separated from the water in the olives. 89% of Olive Oil today is extracted by machine using the centrifuge method. The centrifuge method destroys the molecular structure of the oil, removing its health benefits.
