1) Made with Einkorn. Einkorn is an ancient grain over 3000 years old. It's non-hybridized and non-GMO, unlike modern wheat. High in special antioxidants and has anti-inflammatory properties.
2) Sourdough: Long 48 fermentations to support probiotic growth which helps repair the gut.
3) Stone Ground: we use stone ground flour only.
4) Super Pure: No bromides or dough conditioners are added to the flour. No yeast starter.

The Difference between Einkorn and Kamut
Both Einkorn and Kamut are ancient grains with anti-inflammatory properties.
Einkorn is known for its rich flavor, offering all the health benefits of an ancient grain while delivering a delicious taste. It contains significantly less gluten than modern wheat and is softer than Kamut, resulting in bread that’s fluffier and lighter in texture.
Kamut is very low in gluten and is hypoallergenic, making it a great option for those with sensitive digestive systems. With minimal gluten content, Kamut doesn't have much rise, so it tends to be denser than Einkorn and has a distinct nutty flavor.
